How to Cook Artichokes in a Pressure Cooker. Steam your artichokes in less than half the time using your pressure cooker. This speedy method only takes about 10 minutes!
One of our favorite things to have for dinner at our house is whole artichokes. However, when you steam them, they can take 45 minutes to an hour to cook. A few years ago, we purchased a pressure cooker to be able to can our harvest from our garden and I was excited to figure out how to cook artichokes in a pressure cooker in less than half the time!
How to Pressure Cook an Artichoke
Ingredients needed:
- 2 – 4 artichokes
- Salt
- Pepper
- Garlic powder
- Butter, for serving
To prepare your artichokes, start by cutting off the bottom stem to allow the artichoke to sit flat.
Peel the stem to reveal the inner layer of artichoke. You can use a vegetable peeler, however, I simply use my knife to cut the stem. You want to only keep the inner part, which is very easy to trim by following the edge of the circle inside.
Trim the top leaves off the artichoke. Cut down about 1/4 to 1/2 inch. Cut off any of the ends of the spiky lower leaves with kitchen shears.
Sprinkle salt, pepper and garlic powder over the top of the artichoke, to taste. We load ours up with seasoning.
Place stems and artichokes into your pressure cooker. If you have a tray used for keeping them off the bottom, you can use that. Or you can alternately use a steamer basket.
Fill the pot with about 1 – 2 inches of water. Add enough water, so just the bottom leaves are submerged.
Lock the lid on your pressure cooker and heat to high pressure (on mine this is about 15 psi). Once your pressure cooker comes to full pressure, cook for approximately 10 – 15 minutes depending on the size of the artichokes.
Release the pressure in your pressure cooker. Mine does not have a pressure release valve, so I simply place the pot in the sink and run cold water over the top until the pressure is released.
Drain the artichokes and serve with butter.
To eat your artichoke, you will peel off the outer leaves and dip in butter. Scrape the ‘meat’ off the inside of the leaves with your teeth.
Once you get down to the smaller, purplish colored leaves you can pull them all out usually by grasping them at the top. Scoop out the prickly choke with a spoon. Dip the heart into butter and eat.
Pressure Cooker Artichokes
Ingredients
- 4 artichokes
- Salt
- Pepper
- Garlic powder
- 2 tbsp Butter – melted for serving per person
Instructions
To prepare artichokes:

Cut off stem to create a flat bottom.

Peel and slice stem.

Trim off top leaves of artichoke (about 1/4 – 1/2 inch). Cut off any sharp leaf tips remaining on lower leaves.

Season the top of the artichoke with salt, pepper and garlic powder to taste.
Pressure cooking:

Add about 1 – 2 inches of water to the bottom of pressure cooker.

Add stems and seasoned artichokes.

Bring your pressure cooker to high pressure and then set the timer for 10 – 15 minutes depending on the size of your artichokes.

Release pressure and drain artichokes.
To serve:

Melt butter. Dip artichoke leaves in butter and scrape the meat off with your teeth.

When you get to the smaller leaves, scoop out both the small leaves and the choke (the prickly part). You will be left with the artichoke heart. Dip in butter and eat.

Yes! We cook the stems. Peel the outside and toss them in with the artichokes before cooking.

Great post and insights, artichokes are so delicious and there are so many different ways to cook them. One of my favorites is to actually glaze them with some organic ghee butter, some chili flakes and then throw them on the bbq and let them roast on one of the racks for 15-20 minutes and really soak up that flavour.

If you peel the tough exterior of the stems, they are quite delicious to eat. They taste very similar to the artichoke heart. Hope that helps!

Artichokes are really delicious. You might have to play around with the time a little based on your pressure cooker. I would say start with 10 minutes and go from there!
